Paris "eatinerary" Comments? Suggestions?

Bonjour International Hounds.

I am a dedicated LA chowhound and am taking my girlfriend to Paris for New Years. She's never been to Paris (or France for that matter). I haven't been for a decade and never previously was I able to afford much more than a crepe and croque M.

Staying from Dec 27th - Jan 3. Food's our passion, fun follows, and, of course, wine/beer/booze. We are 37-40. Have rudimentary (at best) French skills.

I am structuring a "eatinerary" and would love your thoughts, comments, suggestions. I've been back-reading this board, devouring (so to speak) P. Wells and other guides. Trying to leave plenty of space for serendipity but also reserve some "tough tables" in advance. Thanks so much for your input.
