What to order at Little Thailand

I have worked my way through most of the Dallas Thai eateries and have come to the conclusion that only one restaurant serves close to authtentic food Jasmine Thai in Plano. They have a Thai menu that you have to ask for and that most of the dishes are not on the regular menu.

I am looking for the same type experience at Little Thailand. I am not looking for Tom Yum of Tom Kha. No Pad Thai or Pad See Ew. I want the good stuff. The stuff no one ever hears about. I have had a wonderful fermented bamboo shoot and turmeric soup with catfish (bones included). Crispy Water Spinach Salad with a Thai Style Dressing (boiled shrimp, fish sauce, shallot, garlic, thai chilies and palm sugar)

I know the availability of some of the ingredients is hard to get but this is the type of dish I am looking for at Little Thailand.
