Oatmeal Raisin Ice Cream: tasty and easy!

I got the basic recipe for this ice cream from The Ultimate Ice Cream book. The first time I made it, I followed the recipe exactly. The second time I made a few changes (switched from white sugar to brown, cooked raisins with oatmeal instead of adding at the end). Here's the recipe with these changes:

2 cups whole milk
1/2 cup regular oats (not steel-cut or instant)
1/2 tsp. salt
3/4 tsp. cinnamon
1 cup raisins
3 large egg yolks
3/4 cup brown sugar
1 1/2 cups heavy cream

Bring the milk to a boil and add the oats, salt, cinnamon and raisins. Cook for ~10 minutes until thick and cream, stirring often. While the oatmeal mixture is cooking, whisk the sugar into the egg yolks until light and fluffy. (Brown sugar is hard to whisk! I had to start this with a spoon.) When the oatmeal is finished cooking, pour slowly into the bowl with yolks and sugar, whisking in thoroughly. Cool slightly, then whisk in cream. Chill in fridge. Freeze in ice cream maker.

This is maybe the best ice cream I've ever made. And super easy, since it doesn't involve making a custard (my ice cream downfall... it never thickens for me!). Very nice flavor for fall. And I can almost justify eating it for breakfast. :)

Next time I make it, I may try increasing the oats slightly and possibly reducing the raisins a little bit.
