Will someone please let me know a store in any of the boroughs that supplie suet for puddings. There are half a dozen British biscuit and pudding recipes I'd like to try which require suet for the requisite texture, and I do not want to try them with any substitutions like Crisco or butter. Also, when looking up suet on the web, all I get a bird food recipes.
I once went to Eagle Foods in Brooklyn, and the butcher gave me some beef fat for free, but I believe the fat has to come from around the kidneys and has to look pearly? If anyone knows of a butcher that knows and has what I need, please reply. Also, if you have any rendering tips or directions, let me know.
