NY Noodletown SB question

I finally tried the salt baked squid at NY Noodletown and it wasn't what I expected. It was very good, but it seemed like it was just covered with salt and fried. I thought it was going to be like a salt-crust. Was I wrong? Is it always this way? Is it even baked?
