Mushrooms and Liquid

I confess, I am confused. Most professional
chefs I have watched on TV have a fit when somebody
asks about washing mushrooms, because they will
get all poofy and soggy with water. Then Cooks
Illustrated soaks mushrooms and weighs them and
they gain very little weight. Our neighbors to
the east tend to use dried and rehydrated mushrooms
with preference for many dishes. The last thing I
want to toss in my spaghetti sauce unwashed is something that
spent a couple months sitting in peat moss in a dark
space.

My question is : is there any
basis for keeping fresh mushrooms dry or is this
some sort of Culinary Academy urban legend?
