I went crazy at Wegman's last weekend, and somehow wound up with about 25 baby artichokes. I love artichokes in general (obviously), but I've never had one smaller than about seven inches tall before. I usually steam them, then dip the leaves in butter.
What should I do with these little ones? Are they tender enough to eat more of than the big ones? Are they exactly the same, but li'l? Should I steam them? Also, does anyone have any serving suggestions or vinaigrette recipes?
