Help - Taking Mom out to Birthday Dinner - need new place

I need help! Mom is not easily impressed. World travler, lives on the UES, likes places like Shun Lee Palace, Cafe Greco, Mon Petite Cafe. Even El Quioxtie in Chelsea although our family has history there so that might be why. No spicey foods, no mexican or indian or thai or sushi. No trnedy places just for the sake of trendy. Upper East side or Chelsea are preferred, but I won't limit it to that. Had fun at Baldoria a while back. I want to say money is no object but it is. Want toward the higher end of restaurants, but not totally crazy. Went to Firebird for her birthday last year and were not impressed. It was ok not great or worth the money. Any ideas? Please help
