I realize mole' isn't everybody's favorite taste ... maybe that's why it's so hard to find any ... and even harder to find good mole'. Further, I'll admit that my experience w/ mole' is limited to the brown one ... dunno what region it's from ... made w/ cocoa, peanuts & hot peppers. My measure of that mole' being good is when you can't tell those ingredients are present w/ your tastebuds because they are so well balanced ... and 15 sec after it hits your stomach is the first you notice there's any peppers in it. When done well, it's very subtle.
Ok ... so ... my favorite place for mole' closed up in S.A. years ago ... Old Blanco Cafe, I think it was called.
But I have learned that there is a big hole in my knowledge about different varieties of mole'. So, not only am I looking for the best mole' ... but also the best of each type of mole'.
I'd prefer to have it on something other than just tamales. Pollo con mole' would be my baseline choice to compare moles ... unless there is a killer example of mole' I need to try that is only perfect on warthog butt. El Chaparral in Helotes has a decent enough mole on enchiladas ... but it doesn't blow me away.
Hmmm ... while we are at it ... is there a perfect libation to have w/ ea type of mole? I'm partial to beer w/ my Mx food, but I suspect a good mole' might be enhanced better w/ something else.
I'm always trying to learn! And generally willing to eat anything that can't move fast enough to get away from me ... and won't bite back.
