I know it's unheard of and most of you have never experienced it, but I put my no knead dough in the fridge after mixing it and after four days it got mold. I checked it every day. On the forth day it had black mold on it so I threw it out. I know some people keep their dough in the fridge for surprisingly long periods. I like to make enough for two loaves, saving the second half for a separate baking on another day for fresh- baked bread.
What do you think caused the mold? Would the mold be OK?
