Mexican (BBQ) catering in Palm Springs or Santa Barbara?

My fiancee are in the midst of choosing a wedding reception location. We have two good options (one in the Palm Springs area and one in Santa Barbara), but it's the food options at each that are most important to us.

Both are a hacienda courtyard settings; we need some solid Mexican food to seal the deal. We're thinking marinated carne asada, chicken, maybe fish, all cooked up on the premises, served with homemade torillas, beans, rice and all the fixins. My family is Mexican, so a touristy place won't cut it.

Anyone have any suggestions?
