What's the matter with chicken today?

Okay, is it that I no longer know how to cook or is chicken just not that great these days? One problem is that the breasts are so huge. I usually slice them horizontally before cooking, which does seem to help. I've tried some super market "organic" brands but haven't really seen a great difference. Butcher supplied chicken seems be be a bit better too.

Any thoughts?
