Masitas de Puerco (Cuban Pork)

Last night I made an "authentic" (so the website said) version of Masitas de Puerco, which did not turn out very well. It's edible, but did not have much flavor which I believe is due to the cooking method. The recipe instructed me to simmer the marinated pork in 2 cups of water until all of the water evaporates and then to saute in olive oil. Is this really how the Masitas is usually made or was the recipe that I found wrong?

I'm thinking that I will try the marinade again and just roast the pork, but if anyone has any other info on authentic masitas I would appreciate it.
