Manistique is a Jersey cow's milk, bloomy rind soft cheese. Zingerman's wraps it in Savoy cabbage leaves to ripen and alter the texture and flavor. It's described as earthy and creamy. I'm wondering if anyone else has tried this, as I found it kind of dirty in taste and not that gooey.
