I'm looking for one of those multi-class programs that take you through all the essentials of cooking - knife technique, sauteeing, grilling, etc. I see from some online research you've got Institute of Culinary Education offering several multi class options for $600 or so, and the French Culinary Insitute has that "hard core" 5 grand 22 week course. Has anyone tried these options, or have any other suggestions? Again, I'm not looking for "speciality", one time courses, rather multiple sessions that cover the basics. Thanks!
