Back in September, I suddenly found out that I had heart problems. As a result, I have to be on a very strict low fat diet - no cheese, no butter, no eggs, no coconut milk, none of t he fun stuff. I've cut out most meat, too, and am eating whole grains rather than things like regular pasta and white bread.
Ironically, I am also not allowed to eat tofu, due to a particular inherited cholesterol factor which soy actually increases.
It's proving exceedingly difficult to go to restaurants and really stick to these restrictions, so I'm trying to get more into cooking. I'm looking for interesting - spicy, flavorful, etc. - recipes that fit in with all this. It's not easy. I've been eating a lot of beans and a lot of salmon, which I like, but if anyone has other ideas, please let me know!
P.S. If anyone out there has high cholesterol or even just a family history of heart disease, I would highly recommend getting something called an EBCT heart scan - it takes 40 seconds and can detect plaque in your arteries. It literally saved my life. You can find out more about it at www.innerimaging.com
