Thanks for all the great advice. The Noreaster packed a wallop. We are at 28 inches and it is still snowing. We lost power at around 8 am and it finally just came back on. Brrrrr
The good news is that we didn't lose power last night! I used everyones idea. I started with basic béchamel. I used fontina, parmesan and pecorino romano for the cheeses. I added sautéed baby portabellas, petite peas and prociutto. Seasonings were just salt, fresh ground pepper and a few pinches cayenne. I didn't have enough panko on hand so I dug out a loaf of bread I made a few months ago out of the freezer and made homemade breadcrumbs which I tossed with extra parmigian and Romano. I sautéed the bread crumbs in a little butter first before adding the cheese. This made a wonderfully crunchy topping after just a brief foray under the broiler!!
So it was a real comfort food kind of meal. We all ate in front of the fire, picnic style. We had a nice earthy Tuscan wine and the toddler had an extra special treat-sparkling apple juice.
