leftover whole wheat bread

I always have more sliced whole wheat sandwich bread in my freezer than I know what to do with and I'm looking for new uses for it. I know all about using stale bread to make croutons, breadcrumbs, stuffing, bread pudding, melba toast, etc., and I love all of those things made from stale white and even rye breads. But I'm hesitant to try these preparations with 100% whole wheat, which isn't as tender as white or as mild in flavor. Does anyone use wheat bread for these things or are there other uses you recommend?
