I just made Joy of Cooking's Black-bottom Cupcake recipe (hubby's birthday, he loves these things), and have lots of the cream cheese "filling" leftover. It's a mixture of cream cheese, sugar, egg, salt, chocolate chips that you put on top of the chocolate cupcake batter.
Think I can just pour it in a small cake/loaf pan, or ramekins or something, and bake it? Or will I need a water bath? Or maybe you have a better idea? I could mix up more cupcake batter, but would rather not to save time.
