I need to do some quick baking today. I only have extra large eggs and need to make an adjustment by weight as the recipe calls for large. (I have good tare scale.)
My memory says large weigh 2 oz, but the extra large I have weigh 2 oz! So, is my memory wrong or are these underweighted x-lg or perhaps a seasonal fluctuation? I once mistakenly used x-lg when a biscotti recipe called for lg and wound up desperately adding flour at the end to get it stiff enough to form logs.
I'll send some virtual biscotti to thank you. (I found an intriguing black pepper/Grand Marnier recipe on Epicurious.)
