Hi Ernie,

I learned how to make Lao Khao Soi last year. I put it on my blog today
Here is my recipe for traditional northern namtha khao soi. Its rather simple and can be modified. If seeing pictures would help, I have them on my barely existent blog. A friend from CH asked for visuals, so voila.

450g (1lb) boneless pork steak ground
450g (1lb)pork fat ground
6 peeled shallots and chopped
1-2 heads of peeled garlic
1 Tbsp oil
170-220g (6-8oz) fermented red soybean paste
10-20 red thai chilies
Last but not least a dash of MSG

process shallots and garlic together into a paste. In blender puree chilies with a bit of water. Coat hot wok/pan with oil then add pork fat and garlic/shallot paste. Then add pork meat. Later add bean paste and chili puree. Cook on mid simmer. Roughly 30 mins total cook time.
