Since the La Cabana in Santa Cruz has been getting SO much attention, I feel obligated to report back on our own little LC here in the Sierra Nevada foothills. ;>P
It's been over a year since our last visit, so I felt a new post was in order.
Hot weather in the valley (actually a cold snap, down to under 100 deg. F) and an obligation to celebrate our BIL's birthday, led us to take the lesser-known backroads along the old Stage Coach route that connects the lower elevation communities along the foothills.
Arriving on time in NF we were advised of the three nightly specials, a salmon dish (had at last nights dinner by half our party, we opted for the other two), a Chicken Roullade (?) in green moe sauce, squash and cheese in a large rolled up chicken breast (pounded, and flattened) and the Short Ribs in Chipotle, iirc, a red chile sauce, muy picante, I'd eat this on pancakes.
The green mole sauce is just incredible, the intensity of flavor I wish that every tomatillo sauce would aspire to. My preferences for thicker application of the saucing aside, I'd love to hear about all of you others hounds' excursions.
Oops, forgot the reason I posted! The baby back ribs in the Chipotle sauce were a bell RINGER! These babies just fell off the bone, and there was no need for the sticky "amateur" sauce that's commonly offered.
