Killer chile rellenos--Nardo's in Guadalupe

We are making our way around the Central Coast once more, stopping at all of our old favorites. Hitching Post in Casmaiia still wonderful. We tried the grilled artichokes this time--OMG how have we missed this in the past?? Don' t miss them!
Today we made our way to Guadalupe for our Mexican food fix. For many years we went to the Guadalupe Restaurant for Huevos Rancheros. Then one year someone told us about Nardo's. We had the chile rellenos and were stunned. We live in San Diego and have many Mexican food options. Hands down these were the best ever! It is a tiny diner with a small counter and a few boothes. The older woman in the kitchen does all the cooking, as she has for over 20 years. She makes the chile rellenos from scratch in the tiny kitchen. We could hear her whipping up the eggs for the coating. Cooked to order means a wait, but it was worth it. I'm glad we got there again, because the cook looks like she may be retiring in a few years.
