Katsu Ya and Tommy Hirase

Chef Hirase, formerly of the Nouveau Cafe Blanc in Beverly Hills, has been reportedly dividing his cooking time between the two valley locations of Katsu Ya.

Supposedly, he is changing/expanding their menus to include the French fusion cooking he is so famous for.

Unfortunately, I sent a friend to the Encino location a Friday or so ago and he reported that nothing was on offer except traditional sushi.

Does anyone know what Hirase is actually up to at these restaurants?
