Jean Michel is tops in my book. My wife and I fell into a babysitter at the last second and were running some errands. We stopped in to see if they would seat us without a reservation. It was early (6:00) so I thought we might get lucky. They offered to seat us if were gone by 7:30. Sounds fair to me.
The food was excellent as usual. (We had been there a few times before and never had a bad meal).
What moved them up from a good restaurant to a restaurant with great service is the way they handled a problem. I ordered a Chocolate souffle. However, when it as served it was undercooked. I alerted the waitress and she apologized, they took it back, offered either another dessert at no charge or would make another souffle. They also took the souffle off of the check. Any restaurant can run into an issue, it is how it is handled that makes the difference.
I took it as a sign that I was not supposed to have the calories, but that is another story.
