Jar Jar Men and Wonton Ramen @ Himawari, San Mateo

The ramen run chugs along even in hot weather. On a recent warm night, William and I returned to Himawari for a quick dinner. He had to have the deep-fried pork belly appetizer again, and once again, it was gloriously stultifying.

William ordered the jar jar men, the Japanese take on a cold version of zha jiang mian. The ground pork in the warm meat sauce was gritty and plentiful with nicely balanced spicy heat. But what kept this from being great was the sauce dressing the chilled green-tinged noodles. It was overly sweet and clashed with the spicing of the sauce. Also, the noodles were on the soft side.

I ordered the wonton ramen with an extra egg and asked for my noodles firm. The shio (salt-flavored) stock was excellent, and I'm with vliang in favoring this over the other stocks here. The wonton wrappers were soft and slippery encasing a filling of juicy ground pork and shrimp. The soy-seasoned egg was softly cooked with a jelly-like yolk. The noodles were as firm and chewy as I like them. A generous topping of freshly chopped green onions and tasty wakame completed the picture. Another winner at Himawari.
