How do Japanese restaurants get their vegetables to look like...

spaghetti? I was at a local sushi place tonight, and the salad had beets, carrots and daikon shredded into long, thin spaghetti strands. Yum!

Do they do this with a mandoline? Or is there some other secret device they use? I want to try this at home.
