Hi all. I need your help.
I would like to have a taco party and make three kinds of tacos, with fixings. So far, I am going to be making Rick Bayless's Smoky Pork Tinga Tacos and his Chard & Carmelized Onion Tacos.
I would really like to make a chicken taco too, but I am not sure what recipe to use. I'm looking at the Green Chile Chicken tacos that are in Mexican Everyday. But I'm not sure I want to make them because:
- The recipe looks difficult to double because it is on the stovetop
- I don't want to have to char peppers (I don't have a grill; I don't want to smoke up my small apartment when there are people over (or trigger the smoke detectors in my 18 story building).
Does anybody have any other suggestions for chicken recipes? Or does somebody want to talk me into making the Bayless Green Chile Chicken ones?
Also, any ideas for a taco party would be great. For fixings, I plan to have avocado, queso fresco, Chulula, and two kinds of salsas (roasted tomatillo and a roasted tomato - might not do a pico de gallo since tomatoes are so terrible this time of the year). I might also make a pot of black beans.
