Irish Soda Bread... pre-make the dough...

I am going to make a bunch of my favorite loaves of Irish Soda Bread (about 8 of them). Can I make the dough FIRST? Then place into my refridgerator in a large zip lock bag until Thursday night (when I would normally bake them)? I have a jam packed schedule- I prefer to prepare them all today and save the baking for later. I don't add yeast to my dough but I have never done this.... This means they would all be chilled in a sealed-tight container for 48 hours..... Also, I don't like making bread to freeze it for two days and then defrost it....its not as fresh/tasty to me. Please advise.... help!
