Though I live on Long Island I go into Brooklyn from time to time. I was hoping that someone could suggest an interesting place for breakfast.
I don't do sweets for breakfast--no muffins, pastries, or other bakery items. This extends to not going for waffles, pancakes and (generally) French toast. For me, breakfast is egg dishes, (omelettes, scrambles, egg in the hole), hashes and so on.
I'm a pretty good cook myself, so I want a place that really does these dishes well, and uses interesting ingredients (otherwise, why go out?). The usual diner spinach & feta or western omelettes are generally not enough to stir my interest.

Also, to clarify: I'm looking for breakfast, not brunch, so not someplace that opens after 11; best if they open by 8, maybe 9. I'm on the fence for a 10 AM open, mainly because Miriam looks interesting:
