Ideas for food-related 3 month sabbatical

After seven long years in my current job, my employer is giving me a 3-month paid sabbatical that I plan to take next year. I am someone who loves to cook but has never tried to work in a restaurant, nor think I would want to. I don't think I would respond well to cooking under stressful conditions. I have never loved cooking classes that I attended in the past, am happy with my cooking skills, though would not be opposed to trying to learn new skills (I am not highly technical and it would be cool to learn some new tricks). I love the mix of food, culture and history. And I love traveling for great food- in the last few years my husband and I have been lucky enough to do amazing foodie trips to Mexico, Japan and shorter trips to Italy, Paris, Barcelona, San Sebastian and Copenhagen. I would love ideas from chowhounders on ways I could spend my time that are food-related, whether it is a course, or a trip or something else. I can choose to do one main activity for the whole period or break it into segments and do multiple things.
