Can anyone explain to me why my ice cream failed to be creamy and smooth ?
Used a basice custard recipe.
2 cup cream
1 cup whole milk
3/4 cup sugar
pinhc of salt
i had some blueberries and lemons so i decided to make some blueberry lemon icecream.
made lemon ice cream before. and it was great.. creamy and delicious.
I pureed blueberries with some vanilla sugar and then tossed this with my cream.. i wanted some color to the ice cream.
i didnt strain here.. i added directly and planned to strain later.
after that i added a lil vodka and added eggs etc
let it cool off and put it in my ice cream maker.
the result was
GRITTY.. A LIL CHALKY.
not smooth and creamy.. and then after i got a slight fatty taste.
it tasted great otherwise.
the flavor combo was great
but the texture was awful.
anyways.. can anyone explain where i went wrong?
I imagineit was with the blueberry puree? too much water in there?
should i have strained first ?
(i strained after including eggs and letting it thicken)
