Huge challenge - cheese substitute for low iodine diet?

Trying to help my roommate out - she is on the low iodine diet in preparation for radioactive thyroid treatment. There are so many things she can't have. Plus she has food allergies to certain nuts. She was able to concoct a margarine using Spectrum shortening, salt, and cornstarch I believe - she found the recipe in her low iodine cookbook or online somewhere.

But she misses cheese - so I was trying to find a substitute. I'm curious about some of these things myself, so it was fascinating to search.

List of things one must avoid on the low iodine diet:
Iodized salt
Dairy products—cheese, cream, yogurt, butter, ice cream
Egg yolks, whole eggs, and foods containing whole eggs
Seafood fish, shellfish, seaweed, kelp
Additives: carrageen, agar-agar, algin, alginates
Cured and corned foods—ham, lox, corned beef, sauerkraut
Bread with iodate dough conditioners
Milk chocolate
Soy products — sauce, soy milk, tofu
Supplements that contain iodine, especially seaweed, kelp, and dulse
Blackstrap molasses (unsulfured molasses is fine)

I did some looking online already about nut cheeses. Cashews, used in some, unfortunately she is allergic to.

Anyone experienced in this area who might know a recipe for something resembling cheese? Just plain cheddar or something would be fine, as she's got other food allergies to herbs etc. Luckily she doesn't have to be on this diet a long time.
