holiday open house party, buffet style, room temp dishes

we are having a holiday party where 20-25 guests have been invited to stop by within a 6 hour window.

does anyone have any thoughts on food that can be served cold or at room temperature, so that guests can serve themselves and i don't need to worry about constant reheating or flavor loss due to cooling?

so far have planned for a ham as well as platters of roasted vegetables, cheeses, salumi, and olives, deserts, too, are relatively simple.

i am, however, stumped on side dishes that are both festive and yummy in a not hot state. salads? grains? jello molds?

any thoughts appreciated.

oh, and will gladly hear alternatives for the ham.
