What is a ham kind of product but with a raw texture?

Years ago I had a delicious ham and put lentil salad in France. It was simply dressed in a vinaigrette but I have never been able to work out what the hammy stuff was. It was soft like the unsmoked bacon you get in the UK or a bit like smoked salmon.

Any ideas? Would love to reproduce the salad at home but the meat has always baffled me.
