Grilling Hot Dogs

I am a hot dog fanatic from New Jersey who has tried most of the places in N.Y. and N.J. I like both all beef and German style pork and beef hot dogs with natural casings cooked on a griddle. I recently got a griddle for home use and was wondering the best way to cook them. How do they do it at Papaya King or Gray's? I suspect they cook them on low heat for a long time. Does anyone know? I would like to end up with a dog similar to one of these. Thanks
