Now that it's grilling season in the Northeast, I'd like to try a barbecued/grilled beef tongue. We've never grilled it, only made it the old fashioned way (2 hrs of boiling, peeling, then roasting/baking in the oven).
I've seen two methods after googling, and was wondering if anyone has tried either.
1) 2 hrs boiling, peeling, then 1 1/2 hours at low BBQ temperatures (190-220). I guess smoke woodchips would be pretty good.
2) A Japanese preparation calle "gyutan", which looks like somehow the tongue is sliced before the grilling. I didn't see any instructions for this one.
Any other good preparations/recipes out there? If it helps, I have a Weber Genesis gas grill, not a charcoal pit.
