Grey Potatoes from Packet -OK to eat?

I normally do the hearty beef stew from ATKs slow cooker revolution -which has you cook the potatoes and carrots, tossed in oil and salt and pepper in a foil packet above the beef and then mixing it in at the end. This usually works great for me. This time I guess I must have set it on low instead of high and the potatoes greyed a bit -so the end result is a bit unappetizing to say the least -but are they still OK to eat?
