I bought some chili meat from D'Angelos, a purveyor of game meats in the Italian market. The chili comes pre-seasoned and is composed of buffalo, venison, alligator, kangaroo, boar, and I guess whatever else they have lying around. The owner suggested that I brown it in olive oil, add some beer and that no seasonings were needed. Well, I sort of did that, although I sauteed an onion with the meat and then added a half a bottle of beer and a can of plum tomatoes to the mix. I didn't add any seasonings, although it was very hard for me to refrain. An hour and a half later I had absolutely delicious chili with minimal fuss. His seasonings were excellent and resulted in a perfectly spicy, rich and flavorful chili -- hot enough but not enough to take the roof off my mouth. I didn't even add salt and pepper and couldn't think of anything else I might have added. Thumbs up.
While I was in there someone came in and bought what looked like a 10 lb boar roast. Almost invited myself to dinner!
