Great desserts in Hong Kong?

Hello fellow 'hounders,

I am planning to go to HK from New York City on the first week of September and I haven't been since 2009. Yes, I have a lot of catching up to do and I'm going to be there for 4 nights.

Going back to the main subject, where are very good places to have desserts or baked goods (and of course, dan tats)? I know of Kee Wah Bakery and Hang Heung Bakery when I last went there (and hauled a few kilos of pastries home) but I know there's bound to be more than those two storied bakeries.

Instead of being too vague about this question, here are what I am really looking for:

1. Matcha (Japanese green tea) soft serve (my mother has been informing me via online based HK newspapers about this huge trend; she did mention and I remembered, about Via Tokyo)

1a. Unusual or "exotic" ice cream shops

2. Cantonese style bakeries like Kee Wah
3. French or Japanese style bakeries? (Not sure if a very good ones exists but I'm asking)
