I've tried a few naan recipes without success. I want to approximate restaurant naan but so far have only managed to make bread that looks like naan but tastes like soft pita.
I know I can't duplicate restaurant naan exactly without a tandoor oven but I improvise using a cast iron skillet in the oven as hot as I can get it.
I think my problem is with the dough recipe. My naan never tastes right and the texture never comes out as chewy as I'd like. I've always kneaded the dough a couple minutes more after getting a gluten window - do I need to keep going beyond that?
Does anyone have a recipe for good chewy naan?
