OK, I am ready to relieve myself of my quasi-vegetarian tendencies and embrace high-quality meat again. I am interested mainly in poultry and beef. I have heard that there is such a thing as "humane veal" and might be interested in exploring this as well. I am willing and eager to form a relationship with a butcher to obtain such products as: beef short ribs, poultry cut to specification (i.e. backs, bones for broth, thighs for braising), squab, duck. Where do I go? I am aware only of some decent butchers at the Farmer's Market at 3rd and Fairfax, but any other ideas would be appreciated. By the way, where the heck do you buy beef briscuit?
