There is a good article in Wine Spectator (August 31 issue) on the creator of the open kitchen now found so often in today's top restaurants. The article also interviews his wine expert, who is responsible for many of his restaurants, if wine is your passion.
Perhaps he does have a different style with his customers than Mario. He is older, more experienced, far richer and perhaps just more confident with nothing more to prove.
