I had wonderful gator tail last night at Bub's BBQ in Sunderland, MA (just north of Amherst). One caveat: I'd never had gator before, so I have nothing to compare it to. The woman who took my order told me it tastes like tough chicken, but I don't agree; it's not fishy, as that would imply a fishy aftertaste, but it's certainly aquatic. The texture is somewhere between fish and chicken. In any case, they only serve it fried, but dipped in their BBQ sauce it's (to quote the White Trash Cookbook) "so good, you'll wanna lay down and scream".
