I have seen, and participated in, many posts about quality fries here and there. I have been trying to work on them at home. What seems to be the secret to:
1. ice water soak before frying
2. cooking at a lower temperature (340)
3. cooling off period of at least 10 minutes
4. re-frying at 375?
