I know this question reveals my unfortunate lack of knowledge but, what really is a "fresh" ham? Yes, I know it's probably a cut of the pig that's not been cured but when you buy one, what does it look like? What (if anything) has been done to it in terms of seasoning, etc., before it ends up in your hands? What's the best way of preparing it? I'm not sure why but I think it's something I'd like and something I'd like to prepare (it sounds festive) but I'm pitifully clueless on the subject. Any enlightenment will be greatly appreciated.
PS: I was going to try to do a pig roast for Xmas Eve even though I know that's an extremely crazy idea. Thought maybe fresh ham would be easier.
