Last year I froze a chicken & corn chowder fully assembled and the results were unsatisfactory with the chowder separating.
I also reason that if the chicken and corn are frozen in the broth and the broth is then used to cook the potatoes the chicken will turn to mush and the corn will be over cooked. The chicken and corn are added at the finish.
Therefore I am looking for advice on freezing separately the broth, chicken and corn.
My goal is to have one large plastic bag containing separate plastic bags of the broth, cooked chicken and corn. I could then sauté onions, carrots and celery ,, add the broth and cook the potatoes. Then finish with the chicken and corn.
Chowder recipe is from 50 Chowders by Jasper Whites.
