So my parents got a boneless Serrano ham from Spain for Christmas. It was an ordeal but I managed to slice the whole thing which involved some handling (albeit with clean hands). Each piece had to be caught and laid down so they just didn't fold on themselves and stick together. Then I vacuum sealed into maybe 6oz packs and the involved more handling to lay them out in layers.
So I currently have three of these packs in my fridge (from Christmas time). I would make the executive decision to eat them as is now so this is not a "is it safe to eat?" post. However, I'd rather save it for months later, perhaps pairing it with some summer produce. Should I freeze it if I'm going to eat it in July and beyond or is it preserved enough? Would the texture suffer from freezing? They are home vacuum sealed. Thanks for your thoughts.
