fixing funny chicken stock

I made a pot of chicken stock last night, using a Bittman recipe I've used many times before, but it tastes a little funny, probably too many vegetables or too much parsley. Do you think it would help if I simmered it again with more chicken? It's good and gelatinous, just not very tasty.
