Does anyone know of a reliable butcher or a meat purveyor that sells Pajata (upper intestine of a young suckling calf) in the Northern New Jersey, Essex County area ?
A chef that hails from Rome recommended that I might be able to obtain this and other offal at Corrados Market in Clifton.
However, when I payed a visit to the market this week my request was rebuffed and I found that the only organ meats for sale were liver, kidneys, tounge and calf brains. Cooking is sort of weekend passion for me, and I would like to try prepare some of the dishes that are served in Rome's "Quinto Quarto" district.
Any leads are appreciated.
